Cooking bhindis and gobi is imperative even important. But it was getting to me a little. I had to experiment despite the non-luxury of a freehand at ingredients.
And so I paired some sour oranges with ripe tomatoes and orange zest. It needed some tweaking but finally I was happy with my sauce.
Now this encouraged me to go for fresh cannelloni, which did turn out perfectly al- dente. Spinach, riccota and Cannelloni are as old as this world. It’s a classic but i wanted funk. So assorted veggies were spiced up & tossed in balsamic honey dressing for the stuffing.
A generous pour of the sauce over the cannellonis and some cheddar cheese went into the oven till the flavours mingled and aromas wafted…
