Butter Roasted Cauliflowers with Dill & Parsley Puree

Some of my best and most experimental recipes have come out of the “Left-overs in the Fridge” Challenge. And this is one such outcome…
The rain soaked Chennai days and lots of herbs in the fridge had been truly inspiring. Though pakodas still remain the champion of this weather, these Hot, Golden and Crispy Butter Roasted Cauliflowers went deliciously well with a creamy yet sharp Dill and Parsley Puree. Roasted pumpkin seeds and a crunchy flatbread accompanied it nicely too.
